Spicy Glazed Brussels Sprouts

This is a delicious way to dress up one of my favorite vegetables with very little effort. Gojuchang is a Korean red chili paste, found in most supermarkets in the Asian foods section. Any similar red chili paste would work too. 

Prep time: 5 minutes. Bake time: 25 minutes

1 pound Brussels sprouts
2 tablespoons olive oil
2 tablespoons gochujang (red chili paste)
1 tablespoon honey
2 teaspoons soy sauce

Preheat oven to 375ºF. Trim ends from Brussels sprouts and halve or quarter. Toss Brussels sprouts with olive oil and spread in a shallow baking pan. Roast 20 minutes, stirring halfway through.

In a small bowl, whisk together gochujang, honey and soy sauce. Pour over roasted sprouts and stir to coat. Return pan to the oven 5 more minutes, until sauce is sticky and caramelized.

Serves 4.

For one large or two regular servings, use fewer sprouts and oil. Leave the sauce quantities the same. It’s delicious and will keep the sprouts moist.
