You’ll need about 1 pound of cooked broccoli, chopped. This is two packages of frozen broccoli, or a big bunch of fresh broccoli, or a bag of fresh cut-up broccoli. The bagged kind (Broccoli Wokly) is easiest. Just micro-steam it in the bag, and then chop it lightly.
Combine until well blended:
- 1 can cream of celery soup concentrate
- 1 cup mayonnaise
- 1 cup grated cheddar cheese
- 2 beaten eggs
- Some chopped onion—½ to 1 onion, depending on your tastes.
Stir cooked chopped broccoli into soup mixture. Pour into a greased casserole dish. Top with corn flake crumbs or buttered bread crumbs. Bake at 350° F. for 45 minutes, until bubbly and brown on top.
Chris’s comment: This makes a wonderful vegetable dish and can also be a main dish in itself. You can make it even more so by adding some cooked chicken to the mix—yum!
