Chris’s Deluxe Chicken Salad

This simple recipe is my own invention. Succulent white-meat chicken, juicy green grapes. and crunchy almonds come together in the perfect bite.

  • Cooked chicken—four skinless, boneless chicken breast halves, poached or grilled, then chilled and cubed. Don’t overcook the chicken—juicy is best.
  • Chopped celery—about 3 stalks, finely chopped
  • Seedless green grapes
  • Slivered almonds
  • Mayonnaise—about ½ cup
  • Sour cream—about ½ cup
  • A little dill weed, a little basil (preferably fresh), a little celery salt or Spice Islands Beau Monde
  • Salt and pepper to taste. Some cayenne pepper is nice if you like a little tang…and it boosts your metabolism!

Combine all ingredients, adjusting grapes, almonds, and seasonings to suit your taste. If the grapes are huge, you might want to cut them in halves. If you need more dressing, add mayonnaise and sour cream in equal quantities.

Chill mixture thoroughly before serving. Makes 3 to 4 servings.
