Fresh ginger always on hand

I love using fresh ginger, but it’s got issues. It’s difficult to peel, and because I used so little, it would tend to go bad before I used it up. Turns out, though, that both of those issues are easy to address.

First, use a spoon to peel the ginger—yes, a regular spoon from your silverware drawer. Just scrape the skin right off. The spoon will reach into the nooks and crannies (ginger is famously riddled with both) and get the whole thing nice and clean. Watch the video below. 

And what about storage? Peel that ginger, and then put it in a small freezer bag. Each time you need ginger, pull out a piece of the frozen stuff and grate it with your zester or box grater. It works like a charm, and you’ll always have fresh (okay, frozen) ginger on hand.
