Hot Olive Cheese Balls

I’ve had this recipe for years. It comes from Ruby, the wife of a co-worker in one of my past lives. These easy-to-make treats are a great appetizer and hold well for a pot-luck supper.

Ingredients:

  • 1 cup sharp cheddar cheese, grated and at room temperature
  • 2 tablespoons butter at room temperature
  • ½ cup flour
  • Dash of cayenne
  • Stuffed green olives, medium to large

Preheat oven to 400°F.

Cream together the cheddar cheese and butter. Blend in the flour and cayenne, making a soft dough.

Drain the olives well. Take about a teaspoonful of dough and wrap it around an olive, forming a ball. Bake at 400 degrees F. for 15 minutes. Makes two dozen or more. These may be reheated or frozen.
